In Hoteles Xcaret, we know that eating is travelling, and that memories also immortalize the palate. We gathered a group of talented chefs to offer premium culinary experiences that make our hotel restaurants, real gastronomic destinations.
GASTRONOMIC GROUP
A group of professionals passionate about innovation forms the Culinary Group at Hoteles Xcaret. Nineteen chefs and one sommelier are invited to be part of this committee responsible for curating the culinary experiences at the restaurants of Hoteles Xcaret. Several chefs awarded with Michelin Stars stand out: Carlos Gaytán, Jonatan Gómez Luna, the Rivera-Río brothers, Paco Méndez, Sheyla Alvarado and Andoni Luis Aduriz, who lead our luxury restaurants, some of them open to the public to become exclusive Playa del Carmen restaurants.

Chef Jonatán Gómez Luna
Jonatán Gómez Luna has been acclaimed as one of the most outstanding chefs on the continent. His training includes experience in world-renowned kitchens such as el Bulli (Spain), and his culinary philosophy is rooted in the creative reinterpretation of traditional Mexican ingredients, techniques, and flavors.

Chef Karime López
Karime López is the first Mexican female chef to earn a Michelin Star. Her training in Mexico, Spain, Japan, and Peru provides her with an international perspective and a deeply Mexican sensibility.

Chef Alejandro Ruiz
The most important spokesperson of Oaxacan kitchen, in charge of Cantina Los Faroles’ menu (Hotel Xcaret México) and Cantina VI.AI.PY. (Hotel Xcaret Arte) and Xaak (Hotel Xcaret Arte)

Chef Carlos Gaytán
First Mexican chef to receive a Michelin Star. He fusions Mexican and French food in a 5-diamond restaurant: Ha’ (Hotel Xcaret México ).

Chef Paco Méndez
Michelin Star chef, who will direct the world’s spotlight towards our author restaurant Encanta (Hotel Xcaret Arte).

Chef Roberto Solís
Internationally famous chef, that fusions Yucatecan and Lebanese food in the Kibi-Kibi restaurant in Casa de los Artistas (Hotel Xcaret Arte). He is also co-creator of the experience at Xaak restaurant (Hotel Xcaret Arte)

Chef Miguel Bautista
Hailed chef for taking vegan food to a cutting edge level. In Bio (Hotel Xcaret México) and in all the restaurants in Hotel Xcaret Arte you will enjoy their vegetarian menus.

Chef Martha Ortiz
With a privileged spot in the international gourmet scene, chef Martha Ortiz mixes science and art to exalt Mexican culture in Tuch de Luna (La Casa de la Playa).

Chef Luis Arzapalo
Chef with a great command of Asian culinary techniques, has created delicious eastern menus in Xin-Gao (Hotel Xcaret México) and Tah-Xido (Hotel Xcaret Arte).

Chef Sandra Fernández
Internationally multi-awarded sommelier, makes a homage to our gastronomy allowing each bite to be enjoyed with the perfect side (Hotel Xcaret).

Chef ANDONI LUIS ADURIZ
Chef Andoni Luis Aduriz has achieved global recognition thanks to his innovative and creative approach, showcased at his restaurant Mugaritz, one of the finest in the world.

Chef RODRIGO RIVERA-RIO
Creative and tireless researcher, passionate about the state of Nuevo Leon, he has put north-eastern cuisine on the map, in Koli, and now in Lumbre and Centli restaurants (La Casa de la Playa)

Chef DANIEL RIVERA-RIO
Pastry Chef. He narrates stories by transforming indigenous ingredients into culinary delights. He has the gift of bringing out the natural sweetness in these products at Lumbre and Centli (La Casa de la Playa)

Chef PATRICIO RIVERA-RIO
He is the best sommelier for harmonizing the dishes of his brothers and obtaining the best results, not only on the palate, but through all the senses at Lumbre and Centli (La Casa de la Playa)

Chef MAO MONTIEL
Master chocolatier and designer, famous for his chocolates with artistic aesthetics and well-defined flavors. Find your chocolates in the Chocolateria (La Casa de la Playa)

Chef Gabriela Ruiz
Born in Comalcalco, Tabasco, Gabriela Ruiz is one of the most prominent chefs on the Mexican culinary scene. She has distinguished her career for her inventive approach and commitment to the essence of Mexican cuisine, working in some of Mexico’s finest restaurants. In 2019 she was named Chef of the Year by the México Gastronómico Guide.

Chef Mariana Valencia
Born in Uruapan, Chef Mariana Valencia is a pioneer of Michoacán’s avant-garde cuisine, and her experience has led her to multiple international venues. Thanks to her career, she earned her a spot in the Larousse Culinary Dictionary.

Chef Lula Martín del Campo
Her sustainable ethos has led her to develop projects with a social focus at vulnerable communities, and her creativity placed her as 2024 Chef of the Year by the México Gastronómico Guide.

Chef Sheyla Alvarado
With training and career roots in Baja California, she presents a flavor journey from sea delicacies. She has also earned a green Michelin Star for her sustainable practices.

Chef Chuy Villarreal
A self-taught cook, he is passionate about wood-grilled dishes that surprise with simplicity, based on family recipes from Monterrey.
